Spring paella with fresh seasonal veggies. I love cooking seasonally. It makes me happy. I really think I am a gardener at heart {but we'll see how that adventure goes in a few weeks}.
The recipe is from Food and Wine over here. I did make a few modifications---omitted the artichokes and only used half the amount of rice called for.
This was my first time making paella, so I was a little nervous. Turned out to be easier than I thought and actually fun.
I know I will make this recipe again. Oh, and the hubs approved!
